By switching from indirect to direct grilling and vice versa, you can ensure that your dessert is evenly baked and crispy from the grill. The food temperature can also be varied by opening and closing the grill hood. A grill with a lid is worth its weight in gold for sweet grilling.

Grilled Dessert: Hot Chocolate Bananas

You Need These Ingredients:

For 4 people

  • 4 bananas
  • 4 chocolate bars
  • aluminium foil (lined with moistened baking paper)
  1. Grilled dessert: Grilled pineapple with caramel sauce

You Need These Ingredients:

For 4 servings

For the dulce de leche caramel

  • 1 can of sweetened condensed milk (400 g)

For the pineapple

  • 1 pineapple
  • 2 tbsp honey
  • grated zest and juice of 2 organic limes

In addition

  • Oil for the grill grate
  • optional: coconut ice cream (from the freezer)
  • 4 tbsp coconut chips

How To Prepare:

  1. Prepare the grill (with lid, about 250 degrees) for high indirect heat.
  2. For the caramel, remove the paper from the can of condensed milk, place it in a grill pan and almost completely cover it with water. Simmer on the grill over indirect heat for about 1 hour. Then remove from the grill, allow to cool briefly and carefully open the can.
  3. For the pineapple, peel the pineapple and cut out 4 finger-thick slices from the middle, do not remove the stalk. Mix the honey with the lime zest and juice and brush the pineapple slices. Set aside the remaining marinade.
  4. Grease the cooking grate with oil and grill the pineapple slices on both sides over direct heat until a pattern forms.
  5. To serve, arrange the pineapple slices side by side on a platter and spread the remaining marinade over them. Place 1 scoop of coconut ice cream on top and sprinkle with 1 tablespoon of coconut chips. Serve with the dulce de leche caramel.

Tip: If the condensed milk is not entirely caramelized after 1 hour, you can pour it into grill cookware and boil it down over direct heat until creamy. It won’t caramelize brown anymore, but it still tastes great.

Grilled Dessert: Pineapple In Puff Pastry With Nougat

You Need These Ingredients:

For 4 people

  • 2 baby pineapples
  • 1 roll of puff pastry (from the refrigerated section)
  • 1 egg white
  • 150 ml coconut milk
  • 200 g nougat
  • 50 grams of white chocolate
  • 2 tbsp hazelnut brittle
  • 1 passion fruit
  • 2 tbsp butter

How To Prepare:

  1. Prepare the grill (with lid, about 180 degrees) for medium direct/indirect heat.
  2. Cut off the leaves and 1 slice of pineapple from both fruits to get an even surface. Put the tuft of leaves aside. Peel the baby pineapple with a knife and hollow out, leaving an edge about 1 cm thick. Don’t cut into the bottom. Use the hollowed-out

flesh for something else.

  1. Roll out the puff pastry a little thinner and cut it into strips about 1 cm wide. Brush the outside of the pineapple all over with the beaten egg white. Wrap the strips of dough around the pineapple until the flesh is completely covered with dough.
  2. Pour the coconut milk into a grill pan and bring to a boil over direct heat with the lid closed. Roughly chop the nougat and white chocolate. Remove the coconut milk from the grill and stir in the nougat, chocolate and brittle.
  3. Halve the passion fruit, scoop out the pulp with a spoon and stir in. Divide the filling between the two pineapples and put the top of each on top. Melt the butter in a grill pan on the edge of the grill.
  4. Grill the pineapple over indirect heat with the lid closed for 20 to 25 minutes. Brush with butter from time to time. Finished!

Grilled Dessert: Strawberry Crumble With Marshmallows

You Need These Ingredients:

For 4-6 people

  • 200 grams of strawberries
  • 3 tbsp strawberry jam
  • grated zest and juice of 1 organic lime
  • 100 grams of flour
  • 80 grams of sugar
  • 80 grams of cold butter
  • 1 handful of marshmallows
  • 1 roll of shortcrust pastry (from the refrigerated section)
  • butter and flour for the mould

In addition

  • Grill or baking pan.

How To Prepare:

  1. Prepare the grill (with lid, 160 to 180 degrees) for low to medium indirect heat.
  2. Wash, trim and halve the strawberries. Marinate with the jam and lime zest, and juice. Use your fingers to work the flour, sugar and butter into fluffy crumbles and chill. Halve the marshmallows.
  3. Unroll the dough. Grease the mould with some butter and sprinkle with flour. Lay the dough in so that it protrudes slightly over the edge. Prick evenly with a fork. Scatter the strawberries, crumbles and marshmallows loosely on top.
  4. Grill the strawberry crumble over indirect heat with the lid closed for 25 to 30 minutes.

Grilled Dessert: Puff Pastry With Fennel And Honey

You Need These Ingredients:

For 4 servings

  • 50 grams of butter
  • 100 grams of honey
  • grated zest and juice of 2 organic limes
  • 1 pinch cinnamon powder
  • Mark of 1 vanilla bean
  • 1 roll of puff pastry (from the refrigerated section)
  • flour for the work surface
  • 1-2 tbsp powdered sugar for dusting
  • 2 tbsp fennel seeds

How To Prepare:

  1. Prepare the grill (with lid, about 200 degrees) for medium to high direct/indirect heat.
  2. Place the butter in a grill pan and melt on the rim of the grill. Put the honey, the lime zest and juice, the cinnamon and the vanilla seeds in grill cookware and cook over direct heat with the lid closed for 4 to 5 minutes until syrupy.
  3. Roll out the puff pastry on a floured work surface, brush with melted butter, dust with icing sugar and fold once. Then roll out to the original thickness. Repeat this process once more.
  4. Prick the dough evenly with a fork to rise evenly when grilling. Brush with the prepared syrup and sprinkle with the fennel seeds.
  5. Grill the puff pastry ribs over indirect heat with the lid closed for 8 to 10 minutes. The surface should caramelize golden brown. She was accompanied by vanilla ice cream!

Tip: You can also prepare the puff pastry ribs if you have a pizza stone or a cast-iron skillet.
